I love to make breakfast in the weekends! There is nothing better than lazy Sunday mornings watching Netflix whilst eating a big breakfast. This Raspberry Blueberry Croissant Breakfast Bake ticks all the boxes. It is sweet and it is satisfying. And it is absolutely delicious!
Raspberry Blueberry croissant breakfast bake
Flaky croissants, raspberries and blueberries covered in cream cheese goodness baked to perfection. Now if that doesn’t sound like one heck of a breakfast I don’t know what does! It is creamy, fluffy and fruity all in one. The perfect lazy Sunday breakfast! You can even prepare it the night before, stick it in the fridge and just pop it in the oven in the morning. Easy. Delicious.
A big breakfast
I really am a sucker for a big breakfasts. I absolutely adore a full English Breakfast oh my those proper English breakfast sausages. It make my mouth water just thinking about them. Sadly we can’t get them anywhere over here so if we visit our friends in England I absolutely pig out on them. Love love love. Although I love a savory breakfast I also have a bit of a sweet tooth. And this Blueberry Raspberry Croissant Breakfast bake is one of my all time favorites! I am not ashamed to say my husband and I eat the whole dish all on our own without leaving a crumb. It is a lot but it is truly finger-licking good and it is impossible to stop eating. Just this morning we had one of our binge sessions on Netflix, I think we watched Ray Donovan for hours and hours and really enjoyed our Blueberry Raspberry Croissant Breakfast bake! Those Sunday mornings to me a priceless.
Raspberry Blueberry Croissant Breakfast Bake
One of the best breakfasts around, it is filling, satisfying, fruity and absolutely delicious!
- 4 large ready baked croissants, ripped into chunks
- 1 handfull frozen or fresh raspberries
- 1 handfull frozen or fresh blueberries
- 1 tbsp raspberry jam
- 200 grams cream cheese
- 2 heaped tbsp sugar
- 2 medium eggs
- 1 tsp vanilla extract
- 250 ml milk
Place croissant chunks in a square pan and sprinkle raspberries and blueberries on top.
In a large bowl mix cream cheese, sugar, eggs, raspberry jam and vanilla until well combined slowly add milk. Keep whisking vigorously until combined and slightly frothy.
Poor mixture over croissant chunks and refrigerate for at least half an hour, or better yet, leave it overnight.
Bake for about 40 minutes in the oven preheated to 175 degrees Celsius. Keep an eye on it, if it starts to get too dark on top cover with foil to prevent it from burning. Serve warm.
This Raspberry Blueberry Croissant Breakfast bake is the perfect way to use up any leftover croissants because it doesn't matter if they are stale.
If you like it sweeter, sprinkle with powdered sugar or even icing before serving.
