This to me truly is the best Summer Salad Ever! It is fresh, fruity, Nutty and Cheesy all in one! What more would you want from a salad on those hot Summer evenings you just can’t be bothered to cook. Just whip it up quickly and sit outside with a nice cold glass of white wine and enjoy! Perfection!

The Best Summer Salad Ever!
A while ago I met a woman called Marianne when I was working in a Deli. She was a customer and I was selling all kinds of cheeses, olives and other yummy foods. Marianne was looking for some ingredients to make a salad because she did not feel like cooking as it was too hot that day. We got talking about salads and she told me about some of her favorite ingredients like fresh salad leafs, nuts and fruit. And yes I was telling her my personal favorites of course. Goat cheese and Spanish ham ( you can literally wake me up for those two ingredients!). On the dressing we quickly agreed: Balsamic vinegar with Olive Oil, a bit of Dijon mustard, salt and pepper.
A bit too much?
As we were talking and getting more and more enthusiastic about our creation I must admit I started to wonder if it was all a bit too much. Would all those delicious ingredients come together to make the perfect summer salad? I didn’t know for sure. Marianne decided to stick to an old and proven recipe of hers. However I was intrigued and really wanted to try this. What would I have to lose right! As I was thinking about creating this salad I even added some more ingredients. When I finished work I picked up all the ingredients and a nice crusty loaf of bread and headed home.
A lot of ingredients
When I came home I put all the ingredients on the counter top and started doubting again. There really were an awful lot of ingredients. Mango, kiwi, melon, pecan nuts, goat cheese, salad leafs, honey, fresh basil, Serrano Ham, balsamic vinegar, Spanish olive oil and a loaf of crusty bread. But hey, self-doubt has always been something to hold me back so I decided to stop over-thinking and just make the darn salad!
I just started chopping up all the fruit into bite size pieces. Layered a big serving dish with those gorgeous fresh salad leafs and topped that with plenty of the fruit. I just ripped the ham in half ( oh boy I’m sure the Spanish would like me to be more respectful to their beloved ham) and draped it on the fruit. Added the goat cheese and the nuts and drizzled with some honey. I whipped up a quick and simple dressing by whisking together balsamic vinegar, olive oil, Dijon mustard and a little bit of salt and pepper. Of course you can add the dressing immediately but I chose to serve it along side the salad to take as you like. It looked stunning that’s for sure. As it was such a hot day I set the table outside. We tried this Summer Salad and it was love at first bite!!
The flavors went so well together it was amazing! I liked this Summer Salad so much I wrote it down immediately ( I usually forget to do this so often have to start all over again because I can’t remember exactly what I put in, I’m terrible!) The next time Marianne came to my work I told her it was fantastic and gave her my recipe. She made it not long after and LOVED it. Since that time I have made it with different kinds of goat cheese and I have used fresh figs instead of all the other fruit to tone it down a bit. Equally fantastic. I you love blue cheese try to make it with Gorgonzola, Prosciutto ( Italian ham) and walnuts. By the way, I always use pecan nuts because I’m allergic to walnuts but feel free to use them in all of the salad variations if you are not allergic!

The Best Summer Salad Ever!
Fresh fruity flavors with creamy goat cheese and crunchy nuts combined with green salad leafs and a bit of honey, this salad is a real treat!
- 250 grams your favorite fresh green salad greens
- 1 mago, peeled and cut into bite size pieces
- 2 kiwi peeled and cut into slices ( I used Zespri gold kiwi)
- 1 small cantaloupe melon, peeled, de-seeded and cut into bite size pieces
- 200 grams soft creamy goat cheese like the affiliate link in the post
- 75 grams pecan nuts
- 1 handfull fresh basil leaves, roughly chopped
- 100 grams Serrano ham, torn in halves or quaters
- 1 tbsp honey
- 1 tbsp balsamic vinegar
- 1 tbsp olive oil
- 1 tsp Dijon mustard
- salt and freshly ground black pepper to taste
In a large serving dish layer washed salad leaves evenly. Spread out fresh fruit on top of salad leaves. Place ham on top of fruit and sprinkle with nuts. Using a tsp make nice little dollops of goat cheese and place on top of salad. Drizzle salad with honey.
Place Dijon mustard in a small bowl. Add Balsamic vinegar and whisk to combine. Slowly add olive oil while whisking vigorously until it gets slightly thicker. Drizzle over salad or put in a nice bowl for everyone to help them selves.
