Salads are not boring anymore!
Back in the day Salads where rather boring I think. Just some green leaves with a French style vinaigrette was all we made. Don’t get me wrong though, I do love the French style vinaigrette and still make it regularly. Salads have evolved into exiting compositions of fresh and healthy ingredients with all kinds of different dressings. If you are interested in different dressing you might want to read more about it here. It is safe to say salads are no longer boring and managing your carb intake has gotten a lot easier! This BBQ Chicken salad to me truly is the best salad ever! It just has it all.
I met Susanne in my late teens and she was everything I wasn’t. She was (and is) a free spirit. She grew up with Hippie parents and was allowed to do completely different things than I was. I was brought up a bit more protected and sheltered. The differences between us drew me to Susanne like a moth to a flame. Susanne joined the circus for a year when she was just 16 to work with ponies and traveled throughout Europe preforming her act. At the age of 17 she left for America to work as an Au-pair for a rich family. It was quite a conservative family but somehow Susanne was loved by who-ever she met. During that time we both developed a love for cooking, her in the US, me in the Netherlands.
When Susanne came back from America we met up again and could talk for hours about cooking. She described the American food so vividly I could taste it! When we talked about salads one day we had a disagreement. I said they where boring she said salads are exciting. After debating this for a couple of minutes she jumped up and said: ” I will prove you wrong Anne-Marie” and took me to the supermarket. I watched here nearly dancing through the veggie department ( she was almost like a little elf) skeptical of every ingredient she put into the shopping-cart.
BBQ Chicken Salad
When we got back home she made me the most fantastic salad I had ever tasted: BBQ Chicken Salad. Her American family used to make this for her a couple of times and told her how to make it. I was in love! Eating that salad for the first time made me want to try more and more. It inspired me to start experimenting more with food in general and salads specifically. One of my latest experiments is my Goat Cheese Salad with Sugared Pecan Nuts. Totally worth a try!
This BBQ Chicken Salad has such tasty ingredients that go so well together. And if that isn’t good enough it is topped off with generous drizzles of buttermilk dressing. Don’t worry if you don’t like buttermilk, I actually hate it but in this dressing it is absolutely gorgeous. So don’t let the buttermilk put you off because than you WILL miss out on one of the tastiest dressings ever!
This salad is a complete meal so its perfect on those long hot summer evenings. Serve it with some crusty bread and a nice glass of wine and you’re all set for a perfect alfresco dinner.

The Best BBQ-Chicken Salad Ever!
- 150 grams diced bacon
- 4 small chicken breast, cut into bite-size cubes boneless without skin
- 4 tbsp Sweet Baby Ray BBQ Sauce or your favorite brand
- 4 hard boiled eggs, peeled and cut into small cubes
- 6 cups of your favorite salad leaves, washed and dried
- 2 tomatoes, diced
- 1 avocado, diced
- 1 small onion, very finely diced
- 250 grams fresh or canned sweet corn drain if using canned
- 250 grams canned black beans, drained
- 1/2 cup buttermilk
- 1/2 cup Greek yogurt
- 3 tbsp sour cream
- 1 tsp dill, dried or 1 tbsp fresh dill
- 1 tbsp fresh parsley, or 1 tsp dried parsley
- 1/2 tsp garlic powder
- salt and black pepper to taste
- 1/2 tsp onion powder
Whisk together the last 8 ingredients for the dressing. Refrigerate until needed.
In a skillet fry bacon on medium high heat until golden and crispy, make sure you don't overcook it because it will end up tough and dry. Take bacon out of the skillet and fry the chicken in the bacon fat. Season with salt and pepper. After about 10 minutes add BBQ sauce and fry until chicken is cooked and the sauce has caramelized the chicken.
Place salad leaves in a large salad bowl. Mixed diced onion through salad leaves. place bacon, chicken, eggs, avocado, tomatoes, black beans and sweet corn on top. Drizzle with dressing.
Serve with the remaining dressing on the side and some crusty bread!
